What documentation do I need?

It is a legal requirement that all food businesses have a documented food safety management system which details your safe practices and procedures based on HACCP principles.

This should include any daily records you keep such as records of storage temperatures, cooking and cooling records, and hot holding.  You also need to keep up to date training records for all members of staff.

We recommend that you download and complete the Safer Good, Better Business pack to get you started.  Failure to have a documented food safety management system and proof of training will result in a low food hygiene rating.
